Ingredients of BBQ Roast leg of lamb
- You need of Leg of Lamb.
- It's 4 Cloves of garlic minced.
- It's 1 Table spoon of fresh Rosemary.
- It's 1 Table spoon of fresh Thyme.
- It's 1 Table spoon of Dijon mustard.
- You need 1 Table spoon of Olive oil.
- Prepare to taste of Salt and pepper.

- Pre heat the BBQ/ Oven for indirect cooking at 170c..
- Score the top of the meat with a sharp knife and push garlic Cloves into the meat then pat dry with kitchen roll..
- In a small bowl combine all the ingredients and mix together..
- Place the lamb in the roasting tin and smother with the ingredients making sure to thoroughly cover the meat..
- Place in the BBQ and roast it untill you reach an internal temprature of 60-66c for medium. Around 1 hour and 30 minutes. I add a bit of smoking wood at this point to add extra flavour..
- Once done let the meat rest for 15 minutes to allow the juices to redistribute through the meat👌.
Leg of lamb looks much more difficult than it is -- and the end result is so worth the effort. Remember that it continues to cook a bit after you remove it from the cooking source Don't be shy with the garlic. Try serving a bit of Horseradish on the side as well as mint jelly.
